Chinese 5-spice orange chicken

1 lb boneless chicken, cubed into 1 ½-inch pieces
1 Tbsp coconut oil (may substitute vegetable oil)
½ yellow onion, peeled and diced into large chunks
2 garlic cloves, sliced
½ cup orange marmalade
1 orange, juiced
1 orange, cut into ¼-inch-thick half moons
1 Tbsp Chinese 5-spice powder
1 tsp ground ginger
¼ cup soy sauce
1 tsp salt

1. In a large bowl, mix together all ingredients for chicken and set aside.
2. Bake in a 400 degree oven for 30–40 minutes, stirring occasionally to ensure even cooking.
