Pumpkin Oatmeal-Raisin Mug Cake

Makes 1 serving

INGREDIENTS
2 large eggs, beaten
3 tablespoons canned pumpkin
1 tablespoon plain 2% Greek yogurt, plus more to serve
⅓ cup rolled oats
1 tablespoon raisins
¼ teaspoon baking powder
½ teaspoon vanilla extract
sprinkle of cinnamon
pinch of salt

PREPARATION
Combine all ingredients in a mug that holds at least 8 ounces. Stir together until everything is thoroughly combined. Microwave on high for 2 to 2½ minutes, until the cake is cooked through. (It’ll rise over the rim of the mug and pull away from the sides.) Let cool for at least a minute, then top with an additional 2 tablespoons Greek yogurt and eat.
