Ingredients:
1 lb boneless chicken, cubed into 1 ½-inch pieces
½ yellow onion, peeled and sliced
2 garlic cloves, peeled and thinly sliced
1 tsp garam masala
1 Tbsp turmeric
½ tsp ground ginger
½ tsp ground coriander
1 tsp ground cumin
¼ tsp cayenne pepper
1 cup of canned chopped tomatoes with the juice
½ tsp salt
½ tsp ground pepper
½ cup full-fat Greek yogurt
1 lime, juiced
Steps:
1. In a large bowl, mix together all ingredients for chicken and set aside.
2. Bake in a 400 degree oven for 30–40 minutes, stirring occasionally to ensure even cooking.
